This Week, I’ve Been Mostly Eating…
Thanks to the much hated sudden computer death, all my food diary records of the last years are gone. Also gone is all other data. I think I will be able to recover all –or most-, but resurrection and replacement of facilities is still a work in progress, so I cannot really go back all those three weeks since the last report.
Thus, from memory since last Friday:
Caldeirada a casa – a Acorean stew with whole fish (I used three Seabreams), mostly consisting of potatoes and cabbage (as you’d expect from the Acoreans), spiced with cumin. The “a casa” variant has less juice as it is steamed in the oven rather than in a casserole.
Confit de Canard Provencale, with Pommes Dauphinoise, green beans and prunes. A fresh green salad (with salad flowers) lots of freshly baked crispy bread and champagne for starters, and strawberry pannacotta for puddings. The ultimate test for the new ovens’ cleaning facilities – eight duck legs splash a lot of fat around. (And the ovens’ cleaning facilities convinced, thanks godness.)

A Dampfnudel tester. More about this next week, but I will reveal that the test succeeded.
